ABOUT THIS PRODUCT

The golden curry that everyone at the table will love

Mekhala’s Organic Thai Yellow Curry Paste is anchored by a single star: organic turmeric — the rhizome that gives this paste its deep, golden-amber colour and warm, earthy, slightly sweet flavour. Alongside it, lemongrass contributes its characteristic fresh, citrusy lift, and galangal — the piney, peppery cousin of ginger — adds depth and a hint of warmth without any sharp heat. These three aromatics are stone-ground together with organic shallots, garlic, lime juice, a mild dried chilli, cumin, coriander seeds, fennel seeds, and Himalayan pink salt.

The result is a curry paste with a flavour profile that is fundamentally different from red or green: it is mellow, golden, and warming — a curry built on spice rather than chilli heat. This makes it the ideal entry point for children discovering Thai food, for guests with low spice tolerance, and for weeknight meals when you want complexity without intensity. It is also one of the most versatile pastes in the Mekhala range, working beautifully with lentils, chickpeas, root vegetables, and fish as well as the more typical chicken or tofu.

Like all Mekhala pastes, this contains no fish sauce, no shrimp paste, no preservatives, and no artificial additives. Every ingredient carries USDA Organic certification. It is made in small batches at Mekhala’s own production facility in Chiang Mai by a female-led team — many of them women from the Burmese Shan community — and packaged in a reusable glass jar that preserves flavour and eliminates plastic waste.

Mekhala was co-founded by Daphne Hedley and Diane Wong, both raised in Singapore — a city whose multicultural food culture deeply shaped their approach. Their mission: make authentic Asian cooking accessible to anyone, anywhere, without compromising on quality, ethics, or the environment.

SIMPLE TO MAKE

Restaurant-quality yellow curry in 3 steps

The golden rule: always fry the paste first. That 60-second step in coconut cream is what transforms the turmeric and cumin from raw spice into something deep and aromatic. Don’t skip it.

1

Sauté the Paste

Add 1–2 tablespoons of Mekhala Yellow Curry Paste to a pan or wok with 2–3 tablespoons of coconut cream over medium heat. Fry for 60–90 seconds, stirring constantly, until golden, fragrant, and slightly darkened. This step blooms the turmeric and unlocks the full aroma of the cumin and lemongrass.

1–2 tbsp paste + 3 tbsp coconut cream
2

Build Your Curry

Add your chosen protein or vegetables — chickpeas, sweet potato, chicken thighs, cauliflower, and carrot all work beautifully. Pour in a full can of coconut milk and a splash of vegetable stock if needed. Simmer gently for 12–15 minutes until everything is tender and golden.

1 can coconut milk · 2–4 servings
3

Finish & Serve

Serve over jasmine rice or with warm roti. Finish with a squeeze of lime, a scattering of fresh coriander, and a drizzle of coconut cream. For extra sweetness and depth, add a small spoonful of coconut sugar to taste. Golden, creamy, and completely effortless.

Ready in under 20 minutes

Paste vs. Sauce : This is a concentrated curry paste — not a ready-to-eat sauce. It needs coconut milk (or another liquid) to create the final dish. One jar makes 4–6 full curries when used at 1–2 tablespoons per serving.

Mekhala Yellow Curry Paste is rated 1 out of 3 on our heat scale — the mildest of all three Mekhala curry pastes. It has a warm, gently spiced character with no sharp chilli heat, making it accessible to most palates including young children, elderly guests, and anyone with a low spice tolerance. The warmth you taste comes primarily from organic turmeric, cumin, and a small amount of mild dried chilli — aromatic rather than hot. For more heat, try Mekhala Red Curry Paste (2/3) or Green Curry Paste (3/3).

No. Mekhala Organic Thai Yellow Curry Paste contains absolutely no fish sauce, shrimp paste, or any other animal-derived ingredients. It is 100% plant-based and vegan. This makes it one of the very few authentic Thai yellow curry pastes on the market that is genuinely safe for vegans, vegetarians, and anyone avoiding shellfish or seafood. Most conventional Thai curry pastes — including many labelled as ‘yellow curry’ — contain fish sauce or shrimp paste as standard ingredients.

Yellow curry paste is the mildest and most approachable of the three. It is coloured and flavoured by turmeric and other spices, giving it a warm, earthy, slightly sweet character — think South Asian spice meets Thai aromatics. Red curry paste uses dried red chillies for bold, warming, moderate heat and is the most versatile all-rounder. Our Green curry paste is the spiciest, made with fresh green chillies, kaffir lime leaf, and lemongrass — bright, herbaceous, and fiery. Mekhala offers all three: Yellow (1/3 heat), Red (2/3 heat), and Green (3/3 heat). Yellow is the ideal choice for families with children, new-to-Thai cooks, or anyone who prefers aromatic depth over chilli heat.

Yes — Mekhala Yellow Curry Paste is the ideal introduction to Thai flavours for children. Its mild spice level (1/3) means no sharp heat, while the warm turmeric, cumin, and lemongrass notes are fragrant and appealing rather than challenging. Use a small amount ombined with creamy coconut milk and naturally sweet vegetables like carrot, sweet potato, or butternut squash for an easy child-friendly meal. Many Mekhala customers use it as a gateway to getting their children interested in Asian cooking. Because it is also free from nuts, gluten, dairy, and eggs, it is safe for children with common food allergies.

Yes to both. Mekhala Yellow Curry Paste is vegan and gluten-free. It contains no animal products, no gluten-containing grains, and no artificial additives. It is also free from MSG and refined sugar. It is dairy-free and egg-free — making it compatible with a wide range of dietary requirements. If you have a severe allergy, please exercise caution and follow your doctor's advice.

Yes. With just 1g net carbs per serving, 0g added sugars, and no refined sugar, seed oils, or fillers, Mekhala Yellow Curry Paste is compatible with ketogenic, Whole30, and paleo diets. To keep your final dish Whole30 or keto-compliant, pair with full-fat coconut milk, non-starchy vegetables such as cauliflower, spinach, or courgette, and your preferred compliant protein (chicken, fish, or eggs).

Start with 1–2 tablespoons of Mekhala Yellow Curry Paste for a dish serving 2–3 people. Because the paste is stone-ground from whole organic ingredients with no fillers or water, its flavour is concentrated — a little genuinely goes a long way. The single most important technique is to fry the paste in 2–3 tablespoons of coconut cream over medium heat for 60–90 seconds before adding any liquid. This step blooms the turmeric and cumin and unlocks the full aromatic depth of the lemongrass and galangal. For a richer, more intensely flavoured dish, increase to 2–3 tablespoons.

Mekhala Yellow Curry Paste is extremely versatile. Beyond the classic Thai yellow curry, try it as: a golden marinade for chicken, fish, or tofu (mix 2 tbsp with olive oil and lime juice, marinate 30 minutes, then roast or grill); a lentil dal base (fry 1–2 tbsp with diced onion, add red lentils and stock, simmer 25 minutes); a roasting seasoning for cauliflower or chickpeas tossed with coconut oil; a golden rice flavoring (stir 1 tsp into basmati rice cooking water for fragrant turmeric rice); or a creamy golden soup base with butternut squash and coconut milk. Because the spice level is mild, it works in virtually any context where you want aromatic warmth without chilli heat.

The key differences: Mekhala is USDA Certified Organic — most other brands are not. Mekhala contains no fish sauce or shrimp paste, making it genuinely vegan — the others are not. Mekhala has no artificial additives, MSG, or refined sugar — the others commonly contain these. Mekhala comes in a reusable glass jar rather than plastic or cardboard. Other curries are sometimes made with wheat flour. Mekhala’s stone-ground paste delivers a more complex and aromatic yellow curry flavour, reflecting the quality and freshness of whole organic ingredients rather than dried powders and industrial processing.

Once opened, refrigerate Mekhala Yellow Curry Paste and use within 4–6 weeks. For longer storage, freeze the paste in tablespoon-sized portions using a silicone ice cube tray — it keeps in the freezer for up to 3 months with no loss of flavor or color. Simply pop a frozen portion straight into a hot pan with coconut cream when needed. The reusable glass jar seals tightly, making refrigerator storage straightforward.

Mekhala curry pastes are handcrafted in small batches at the brand’s own production facility in Chiang Mai, Thailand. Raw ingredients are sourced from local farms using regenerative farming practices including crop rotation and cover cropping, with no synthetic pesticides or GMO crops. The production team is female-led and includes women from the Burmese Shan community — making every jar a genuine act of ethical, purposeful production.
