ABOUT THIS PRODUCT
Sweet, smoky, and irresistibly versatile — organic roasted chilli paste for cooking and the table
Mekhala’s Organic Roasted Red Chilli Paste occupies a unique position in the range: it is as much a table condiment as it is a cooking paste. The foundation is roasted dried red chillies — the slow-roasting process transforms raw chilli heat into a deeper, more complex, smoke-tinged warmth that builds gradually and lingers pleasantly, rather than hitting sharply. That roasted chilli character is what defines this paste and what makes it so compelling across so many different applications.
The flavor architecture is sweet-savory-smoky-tart: coconut sugar brings a natural caramel sweetness that rounds the chilli without masking it; tamarind provides a fruity, slightly sour counterpoint; shallots and garlic add aromatic depth; and a small amount of gluten-free soy sauce contributes background umami. The result is a paste that is somewhere between a Thai nam prik pao (roasted chilli paste), a Southeast Asian chilli jam, and a sophisticated smoky condiment sauce.
SIMPLE TO MAKE
Sweet & Easy BBQ in 3 steps
The secret to getting the best flavor is always Step 1 — frying the paste to release its aromatic oils. Don’t skip it.
Marinate Your Protein
Spoon 2 heaped teaspoons of Mekhala Roasted Red Chilli Paste into a bowl. Add your protein: whole fish (sea bass, red snapper, or mackerel), chicken thighs, pork ribs, or vegetables. Turn to coat evenly. Marinate for at least 30 minutes — overnight in the refrigerator for the deepest flavor and most dramatic results.
2 heaped tsp paste • 30 min minimum marinateGrill or BBQ
Place marinated protein on a hot grill or BBQ over medium-high heat. The coconut sugar caramelizes quickly — watch carefully. For whole fish: grill 5–6 minutes per side. For chicken thighs: 7–8 minutes per side. For vegetables: 4–5 minutes per side. The paste creates a deep mahogany crust when properly caramelized.
Medium-high heat • Watch for caramelisationServe & Garnish
Serve with steamed jasmine rice, a fresh herb salad, or sliced cucumber and tomato. Bring extra paste to the table as a dipping sauce — a small ramekin alongside grilled fish or chicken is the perfect condiment. Garnish with lime wedges and fresh coriander. The paste’s sweetness pairs naturally with the brightness of lime.
Paste as table condiment • Lime + coriander to finishCheese board moment:Spoon 2–3 teaspoons into a small dish and serve alongside aged cheddar, brie, or manchego with crackers. The sweet-smoky-tart chilli paste is extraordinary as a relish — it replaces chutney, fig jam, or pepper jelly and is significantly more interesting than any of them.

VERSATILITY
Seven ways to use Roasted Red Chilli Paste
From the cheese board to the BBQ grill, from burger sauce to fried rice seasoning — this is the most cross-cuisine condiment in the Mekhala range.
BBQ & Grill Marinade
Marinate whole fish, chicken thighs, pork ribs, or vegetables for 30 minutes to overnight. The coconut sugar caramelises into a deep, dark crust on the grill — stunning visual and flavour results.
Sandwich & Burger Sauce
Spread directly on burger buns, wraps, or sandwiches. Replaces ketchup, sriracha, and chilli sauce with something far more complex — sweet, smoky, and lightly tart.
Cheese Board Relish
Serve in a small dish alongside aged cheddar, brie, manchego, or gouda. Sweet-smoky chilli paste with mature cheese is exceptional — more interesting than chutney or fig jam.
Stir-Fry Sauce
Add 1–2 tsp to a hot wok with tofu, prawns, or beef strips. The sugars caramelise into a sticky glaze. Toss with rice noodles or serve over rice for a quick weeknight flavour hit.
Fried Rice Seasoning
Stir 1 tsp into fried rice at the end of cooking for a deep, smoky-sweet background note. The tamarind adds a dimension no soy sauce can match — transforms a simple fried rice.
Eggs & Brunch
A small spoonful alongside scrambled eggs, fried eggs, or a shakshuka base. Also excellent stirred into egg-fried rice or served with a frittata as a table condiment.
Dipping Sauce
Serve straight from the jar for spring rolls, dumplings, grilled satay, or prawn crackers. Thin with lime juice and a splash of water for a pourable consistency.
Pairs well with
Sweet and smoky roasted chilli is one of the most naturally versatile flavor profiles — it works across proteins, cheeses, and carbohydrates alike.

Yes. Mekhala Roasted Red Chilli Paste is the same product as the Mekhala Roasted Sweet Chilli Paste — it has been renamed. The formula, ingredients, and flavor profile are completely unchanged. The name change better reflects the product: the roasted, smoky depth of the dried red chillies is just as defining as the sweetness from coconut sugar. The new name also positions it more accurately for its full range of uses — including as a BBQ marinade, cooking base, and savory relish.
Sweet, smoky, and deeply savory — with a warm, building heat (2 out of 3 on the Mekhala scale) and a pleasant tartness from tamarind. The dominant flavor note is the richness of roasted dried red chillies — deeper and more complex than fresh chilli heat — balanced by coconut sugar, which adds a natural caramel sweetness, and tamarind, which provides a fruity, slightly sour counterpoint. The overall effect is closer to a high-quality chilli jam or Thai nam prik pao than a hot sauce.
Nam prik pao is a traditional Thai roasted chilli paste made by roasting dried red chillies, shallots, garlic, and tamarind together — a foundational ingredient in Thai cooking used as a condiment and stir-fry base. Mekhala Roasted Red Chilli Paste is directly inspired by this tradition, sharing the same core ingredients. The key differences: Mekhala uses organic ingredients, coconut sugar instead of palm sugar, and no shrimp paste — making it 100% vegan, fully organic, and gluten-free.
Yes. Mekhala Organic Roasted Red Chilli Paste contains soy in the gluten-free soy sauce component (made from brown rice, soybeans, salt, and water). If you have a soy allergy or intolerance, this product is not suitable. The paste is labelled gluten-free but is not soy-free. The soy sauce contributes background umami depth.
This paste contains a small amount of organic sunflower oil, which is traditional for roasted chilli condiment pastes. The oil helps integrate the roasted chilli with the other ingredients, provides a silky texture, and acts as a carrier for fat-soluble flavor compounds. The Thai and Southeast Asian curry pastes in the Mekhala range are dry-ground and don’t use oil. The total fat per teaspoon serving is only 1g.
Mekhala Roasted Red Chilli Paste is rated 2 out of 3 on the Mekhala spice scale — medium heat. The roasted dried red chilli delivers a warm, building heat that lingers pleasantly, but does not have the sharp intensity of fresh chilli or the sustained heat of Mekhala’s Green Curry Paste (rated 3/3). The coconut sugar and tamarind round the heat significantly, making it approachable for most adults with moderate spice tolerance.
Whole30: Not compliant. Whole30 prohibits all added sugars — including coconut sugar, which is the primary ingredient in this paste. It also contains soy, which Whole30 does not permit. Keto: With 3g total carbohydrates and 3g sugars (including 2g added sugars) per teaspoon, this paste is less compatible with strict ketogenic diets. Small amounts as a condiment drizzle may be workable within a flexible keto approach.
Refrigerate after opening and consume within 30 days. The natural acids from tamarind and soy sauce, the oil, and the coconut sugar all contribute to stability, but refrigeration is essential. The glass jar seals tightly for clean refrigerator storage. For longer storage, freeze tablespoon-sized portions for up to 3 months — frozen portions thaw quickly and work well as a BBQ marinade base.
